Let’s make something yummy and in less than 30 minutes. Of course you have to do some pre planning.
2 cups pre-cooked brown rice
half an onion
1 cup pre-cooked chicken
2 cans black beans, rinsed
8 oz sour cream
4 oz diced green chiles
1 cup shredded cheese
See what I mean, it helps to have the rice and chicken already cooked. This would be a perfect week night meal. Mix rice, beans, onions and green chiles.
Now the chicken and the sour cream.
Stir it all up and add to a greased baking dish.
Top with half the cheese.
Bake @ 350 for 20 minutes. Then add the rest of the cheese and bake another 10 minutes.
Serve hot, it’s the only way.
