Garbanzo Bean Salad

I love a side dish that’s quick, easy and healthy. Here is one that definitely gives me butterflyz.

2 cans of garbanzo beans, drained and rinsed

half of a red onion, thinly diced

half an English cucumber, thinly diced

1 jar roasted red peppers, chopped

8 oz crumbled feta

1 garlic clove

1 handful fresh basil leaves

juice of 1 lemon

1/4 cup olive oil

salt n pepa

Place the onion, cucumber, red peppers and garlic in a bowl.

Add the beans.

Throw in the basil and feta. Dang that stuff looks like it’s glowing in the dark!

Pour in the olive oil and squeeze in the lemon.

Add salt n pepa and stir well. Oh snap, this is just beautiful!

Either chill in the fridge or eat right away. I recommend chilling, the flavors come together even better.
