Carrot Cake Protein Bars

Yep I know you are thinking this probably sounds too good to be true. But let me start by letting you know there is no cream cheese frosting, so don’t ask me where it is.

1 cup oat flour

2 scoops vanilla whey protein

2 tsp cinnamon

1/2 tsp baking soda

1/4 tsp salt

1/8 tsp allspice

1/8 tsp nutmeg

4 egg whites

3/4 cup splenda

8 oz baby food carrots

4 oz water

Preheat oven to 350 degrees. To make oat flour, you get a cup of oatmeal and grind it in a food processor.

Look, now we have oat flour. Stir in whey, spices, baking soda and salt.

Mix egg whites and carrots in a bowl. Wow this really looks nasty.

Add splenda.

Give it a nice stir.

Combine mxture with oat flour. Yep this still looks pretty weird.

Pour into greased 9×9.

Starting to look normal right?

Bake for 20 to 30 minutes.

Cut into 16 squares once cooled. Each serving of 2 squares is only 94 calories and 10 grams of protein.

Now we can have our cake and eat it too without feeling guilty. Delish!
