Veggie Burgers

I love this time of the year. My Oxygen magazine always has the best recipes that are healthy and yummy. I’ve also started yoga and really wanted a light yet fulfilling dinner. Here we go.

1 cup white kidney beans

8 oz mushrooms

1/2 cup oats

4 oz artichoke hearts

2 tbsp roasted red peppers

1 tbsp balsamic vinegar

To serve: eggs, avocado, greens, bun

Turn oven to 400 degrees. You can either mush and slice all the ingredients small, or use a food processor like I did. First the beans.

Throw in a bowl. Grind the oats.

Dry the artichokes and peppers then place the food processor.

Add vinegar and stir well.

Mush all ingredients together and form balls with your hands. This was supposed to make 4 burgers, but I somehow got 7.

Squish down to make into a patty. I chose a plate.

See?

Bake these babies for 20 minutes.

Grab some greens, place on one half of a bun. Top with burger.

Add fried egg, avocado and sriracha if you want it a little spicy.

Bon appetit without the guilt.
