Slow Cooked Sweet N Sour Chicken

My baby girl loves sweet and sour chicken, but this mama ain’t gonna fry it up for her. Here is a recipe we found that made the both of us happy. You could say, a compromise. I’m willing to enter into negotiations when it comes to dinner.
For Slow Cooker:
3 chicken breasts or 6 drumsticks (diced if using breasts, whole if using drumsticks)
1/2 cup chicken broth
1/4 cup brown sugar
1/2 cup turbinado sugar
1/3 cup rice vinegar
juice of 1 lemon
2 tbsp tamari soy sauce
3 tbsp tomato sauce
2 cloves garlic
2 tbsp ginger, fresh or pickled
To serve:
1/3 cup chicken broth
1/3 cup cornstarch
3/4 cup fresh pineapple, diced
1/4 onion, diced
1 green pepper, diced
Mix broth, sugars, vinegar, lemon, soy sauce, tomato paste, garlic, ginger and pepper.
Stir it all up.
Lay chicken in the slow cooker.
Pour sauce over chicken. It’s a sauce bath baby!
I also added 2 cups of water here so all the chicken would be covered. Put a lid on it and cook for 6 to 8 hours.
If you used drumsticks, remove from slow cooker. Remove skin and shred meat.
Return shredded chicken to slow cooker.
 Combine broth and cornstarch in a bowl and add to cooker, along with pineapple, onion and green pepper.
Cook another 30 minutes. Serve with rice and Sriracha.
This got a thumbs up which means it’s almost as good as the real thing.
