Pepperoni Pizza Pasta

It’s hard to make something for 8 kids that they all will like. Inspired by plain old pizza and a cost effective way to feed so many mouths, it’sa marriage of pepperoni pizza and pasta.
 
 
2 tbsp olive oil
28 oz crushed tomatoes
2 packages uncured pepperoni, sliced into pieces
1 box rigatoni
1 cup shredded mozzerella chesse
1 cup diced sweet peppers
2 cloves garlic
1 tsp dried oregano
pepper
 
Preheat oven to 350 degrees. Bring water to a boil with 1 tbsp olive oil , then add pasta.
 
 
 
Use other tbsp of olive oil in a heated skillet, and sauté garlic for a minute. 
 
 
Then add the peppers.
 
 
Drain pasta, return to pan and add tomatoes.
 
 
Add pepperoni.
 
 
Add in garlic/pepper mixture as well as oregano and pepper.
 
 
Add 3/4 of the cheese. Stir everthing well. I mean it. Stir!
 
 
Place in a large baking dish. If you happen to like a little heat, add crushed red chili peppers. Love them!
 
 
Top with the saved cheese and bake for 25 minutes.
 
 
 
Eat warm!
 
 
 
Kids will eat this up and if they have talked you into inviting all their little peeps over, this meal is in the best interest of everyone.
