Guess Who Loves Salsa Verde?

ME ME ME ME ME ME! Oh, and me! Here is my most favoritist kind in the whole galaxy!

I have decided to try to recreate this at home based on the list of ingredients that are on the back.  How can this fail?

2 lbs tomatillos – peeled and washed of stickiness

1 small can tomato paste – supposed to use yellow tomato paste but where do you find it ????

3 cloves garlic

2 jalapenos

4 sweet peppers

1 yellow onion

2 tbsp vinegar – white or rice

1 giant lemon

1 tbsp sugar

1 bunch of cilantro

2 tsp smoked paprika 

salt n pepa to taste

Look how crazy this is … even tomatillos get stretch marks!

Cut tomatillos and peppers and place in a food processor or blender. I always start with the processor and then finish with the blender once everything is teeny tiny.

Plop it into a waiting bowl for later adding to the blender.

Now do the onion.

Now I just had to continue the crazy epidemic that has plagued my salsa. We’ve got pink garlic!

Just the outside not the inside. Process that, the tomato paste and the cilantro. Even the stems. Add 1/4 cup of water for easier blending.

Add sugar and seasonings. Throw into a blender and thoroughly combine.

Not exactly like Pace but a really nice concoction. I can’t wait to gobble this up on some eggs.
