Eggs Benedict …. In A Wonton!

Inspired by Ree Drummond and our love of anything in a wonton. Bee and I share this creation and whoa was it just about the tastiest thing I’ve ever had in a wonton.

3 red potatoes, peeled, diced and roasted

4 slices canadian bacon, diced

24 won ton wrappers

1/2 red pepper, diced

6 eggs

1/2 cup half and half

dash of smoked paprika, lemon pepper, salt

hollandaise sauce

So I decided I could not make the sauce from scratch. 2 sticks of butter in a little sauce, no thank you. Just this one time, I’m taking the easy way out. This is for Brooklyn’s breakfast afterall and I only have so much time. Preheat oven to 350 degrees. Mix eggs and half and half in a bowl.

Add seasonings.

Grease a baking sheet and place 2 wontons in each cup.

Assemble the crew.

Fill each cup with a little of the ingredients.

Fill each up with the egg mix.

Bake for 15 to 17 minutes or until eggs are done.

Cook hollandaise according to package directions. Pour over wontons and sprinkle with a little paprika.
