Nothin But Meat In My Meatballs

One day while browsing the web for a new meatball recipe, I came across these little slices of heaven called Super Evil Meatballs. You know I had to check them out. Nothing but meat, egg and spices. So yes people, these are so gluten free.

1 pound thick ass bacon

12 oz lean ground beef

8 oz ground pork

2 tsp. kosher salt

2 tsp smoked paprika

2 tsp oregano

1/2 tsp celery seed

1/2 tsp ground pepper

1/2 tsp crushed red pepper

1 egg

Throw ground beef and pork into a bowl.

Slice bacon into pieces and toss into a food processor.

Blend until it looks like tuna. I kid you not! Add to meat mixture. Then add egg and spices.

Stir it all together. Prepare a baking sheet with foil.

Preheat oven to 400 degrees then heat up a frying pan over medium heat. Add some meatballs to the pan a few at a time. Sizzle until nice and juicy for a few minutes.

Flip and cook for a few more minutes until browned.

Place on your flying saucer of a baking sheet and bake for 15 minutes. Eat alone with some spaghetti sauce to make GF or pile into a hoagie.

Cover with sauce and a little parm cheese. Serve with something green.

Mmmm, these have got to be the best balls ever!
