Ok so this is bread pudding of the breakfasty kind, not sweet but yum. You can even build it the night before so all the hard work will be done for ya.
1 yellow onion, sliced
3 tbsp butter
4 bratwursts, sliced or breakfast sausage
8 slices of bread, I used rye but PW suggested Texas Toast, just pick what you like
1 red bell pepper, diced
2 cups shredded Monterey Jack cheese
3/4 cup half and half
salt n pepa
dash o’ cayenne if you dare
Warm up a skillet with 2 tbsp of the butter. Add in the onion and sizzle it up.
I cooked my brats on the grill. So either add in the sliced brats so they soak up all oniony flavor or cooked the breakfast sausage now. In a new bowl, combine the eggs, half and half, pepperand cayenne.
Time to build breakfast. Grease a pan. Throw in some onion and chopped up bread.
Add red pepper, sausage and cheese.
Rinse and repeat with all ingredients. Then pour in the gooey eggy mixture.
Make sure the egg mix is spread evenly throughout the pan.
Bake @ 375 20 minutes or until eggs are cooked. No one likes raw eggs!
