Baked Banana Puddin’

Is it bread or is it puddin’? Oh snap it’s both! Heck you could consider it a dessert cocktail since we have a special guest known as Bacardi.

2 ripe bananas

juice of 1 lemon

1/3 cup room remperature butter

1 cup brown sugar

4 eggs, room temperature

2 tsp vanilla extract

1/4 tsp salt

1/2 tsp nutmeg

1/3 cup flour

1/3 cup coconut milk or heavy cream

1 tbsp rum

1/2 cup dried cherries (optional)

1 cup shredded sweetened coconut (optional)

1/2 cup chopped pecans (optional)

Preheat oven to 350 degrees while you grease up a pan. 13 x9 is good unless you would like bigger bread. In that case use a loaf pan. Start by mushing up the bananas and add the lemon juice.

Get another bowl. Add butter and brown sugar, mix. Beat in one egg at a time followed by vanilla. Add in cream and rum. Heck take a shot to celebrate your baking. I’ll never tell.

Fetch yet another bowl. Combine flour, salt and nutmeg. Slowly mix into the butter and suga mixture. Pour into baking dish.

Now stir in the cherries if using and I hope you are.

Bake for 30 minutes. Mmmmm, you would not believe the scent coming from my oven at the moment.

Now top with shredded coconut.

Bake another 15 to 20 minutes until nice n toasty. Slice and top with pecans.
