Blackened Haddock

In our attempt to eat more fishy fishy, Bee and I decided to pick one we had never tried before. On sale was haddock so we bought it. Don’t ask me to give you the life story of haddock because I’d never heard about before I cooked it LOL. This seriously is the best fish recipe I’ve ever made that didn’t involve Dom and the grill.

2 haddock fillets

3 tbsp butter

1 garlic clove, sliced

2 tsp. smoked paprika

1/2 tsp oregano

1/2 tsp cayenne pepper

1/2 tsp pepper

salt to taste

1/2 tsp sugar

1 lemon

Add paprika, oregano, thyme, cayenne, sugar, salt n pepa to a bowl. Cut fillets of fish into bite size pieces and coat fish well with spices.

Time to get to the fun part. On low-med heat, melt butter and garlic. Once butter is melted remove the garlic and turn up the heat to medium-high. Save for later incase a vampire tries to come to dinner.

Throw in some fishy. Cook for about three minutes and flip it to cook the other side.

Can you believe this? Our house smelled ah-mazing! I’ve got splatter everywhere and I don’t even care. Could this cook any faster?

Serve ASAP with some veg and a squeeze of lemon.
