Veg Stew (Calabacitas)

I love me some din that’s loaded with veg. Especially something that’s easy. Let’s make some more grub from Homesick Texan.

1 tbsp olive oil

1 lb porkloin

1 yellow onion, diced

6 cloves of garlic, minced

4 serrano chiles, diced

1/2 cup chopped cilantro

1/2 pould tomatillos, quartered

1 large red tomato, quartered

1 tbsp ground cumin

1 tsp oregano

1 pound diced zuchini

1 pound diced yellow squash

1 cup frozen corn

1 cup chicken broth

salt-n-pepa

juice of 1 lime

Sizzle up the piggy over medium high heat. About 10 minutes. Brown all sides.

Cut into little pieces, and finish cooking through.

Remove cooked piggy and place in a bowl. Saute onion and garlic for a few minutes.

Time to use all these lovely veggies.

Throw them in the pot. Add the piggy, corn and the spices and pour in the broth.

Stir and bring to a boil.

Simmer for 30 minutes to get all the veg soft. Serve with beans and a sprinkling of cheese.
