Once again, that Pioneer Lady got me. Cheesey Chowder? Yes!
4 tbsp butter
1 onion, chopped
3 slices of big ol’ bacon
3 bell peppers, diced
1 cup frozen corn
1/4 cup flour
3 cups chicken broth
2 cups half-n-half
2 cups colby jack cheese
1/3 c sliced green onions
bread bowls or homemade croutons, 3 slices french bread required for croutons
Time to make some soup. Heat up the butter over medium heat, add the onion. Saute.
Add the bell peppers.
Grab your big ol’ bacon. Oh mama that’s bacon!
Cook in a separate pan so you can dismiss the grease later. Slice into tiny pieces.
Back to the chowder. Let’s add some corn. Stir and add the flour.
Then pour in the broth and the half-n-half. Stir that baby good.
Yes. I know. This looks good already. Well you know what. Let’s make it even better. Cheese time!
Stir in the bacon and the onion. You will be too full to make out with anyone after eating this so don’t worry about overuse of onions.
Let all the flavas come together. Turn the oven on broil. Let’s make some croutons. Brush 3 slices of french bread with olive oil.
Slice into sticks and broil until brown. Oooh la la.
Throw in a bowl, top with the croutons. Can you freaking believe how good this looks?
Eat your heart out. Then plan on getting up early the next morning to run a marathon.
