Boiled asparagus gets limpy and no one likes that. You want a soft crunch. So you gotta bake ’em.
1 bunch aparagus
2 tbsp olive oil
juice and zest of half a lemon
sprinkling of kosher salt
Preheat the oven to 400. Cut an inch of the bottom of the washed asparagus. Drizzle on the olive oil and lemon juice. Sprinkle on salt and lemon zest.
Bake for 15 to 20 minutes. These are the kind of cookies I’ll be eating now.
