Baked Ta-Quit-os

Taquitos make people happy. Period. These are baked, way better for ya than the fried kind. First, let’s make our own buffalo wing sauce.

1/4 cup rice wine vinegar

2 tsp chili powder

1 tsp smoked paprika

1/2 tsp sweet paprika

2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp cayenne pepper

1/4 tsp salt

1/2 tsp brown sugar

2 tsp canola oil

Bring all to a boil in a pan over medium heat, make sure to stir. Let cool and store in the fridge when done. Honestly if I were to make this again, I would add some tabasco.

Alright, let’s bake!

8 oz softened cream cheese, I used Neufchatel, softened

1/4 cup of your homemade buffalo sauce, or some Frank’s Red Hot Wing Sauce

1 cup shredded cheese of choice

1/4 cup blue cheese crumbles

big can of chicken breast in water, drained

12 8 inch tortillas

salt

Get the oven nice and toasty @ 350 degrees. I decided to make 2 batches. One spicy and one regular. Do how you please. First mix the cream cheese and the buffalo sauce. If making a regular one, just stir up the cream cheese to loosen up.

Throw in shredded cheese, blue cheese and chicken. Stir it up ….

Place a little of the mix in a tortilla.

Roll it up and place in a greased baking pan. Salt if you like.

Bake for 17 minutes or until nice and crispy.

Serve with some Frank’s Red Hot or your leftover homemade sauce.
