Tim calls this concoction Machaka, but according to, it’s another word for meth. So I’ve renamed it Tim’s Chicken Thing until I can come up with something better. All I know, it’s freaking amazing and I have to share.

Get you a whole chicken. Boil it in a pot of water to cook through so it looks like this. Save the broth, you’ll need it for later.

Let that stuff cool while you make the sauce.

chili powder – see pic below

cumin – see pic below

smoked paprika – see pic below

salt-n-pepa – see pic below

6 cloves garlic, minced

1 yellow onion, diced

2 can diced green chiles

28 oz can diced tomatoes

15 oz Mark Schlereth’s pork green chile, or some of those roasted chiles from the side of the road vendors

Put it all in a pot. Do you see the visuals on the spice measurements? That’s how much to use for the spices. Use some of the broth from the chicken. But you don’t want it too juicy so don’t use it all.

Go shred the cooled chicken.

Pour the meat it into the sauce.


Serve alone or as a saucy addition to a burrito.

Update: I guess the real way to spell this is Machaca. It always helps to check both spellings before assuming drug innuendos.
