We’ve all had Sloppy Joes. That childhood classic has received a makeover and you will be utterly amazed how this can now be a real adult meal.
1 1/2 lbs ground beef
1 chipotle pepper in adobo sauce
1/2 medium sized yellow onion, diced
1/2 red bell pepper, diced
4 cloves of garlic, chopped small
15 oz. canned tomato sauce
2 tsp oregano
2 tsp ground cumin
1 tsp smoked paprika
1/4 tsp ground allspice
pinch of cayenne
2 tsp worcesterchire sauce
a 12 oz bottle of beer, my preference is Dos Equis Amber Ale
2 tbsp ketchup
1/2 cup chopped cilantro, divided
juice of 1 lime
Garnish with cilantro, cheese and jalapeno, serve on a bun
Brown your meat in a pot. Mmmmm
Once cooked, drain any grease that may have formed. In a small skillet, saute onions, bell pepper and garlic until soft.
Throw into the pan with the drained meat.
Time to make your Joe sauce. Get a blender and add tomato sauce, chipotle pepper, spices, worcestershire sauce, half the cilantro, and the ketchup. Before we get to this next part I have a confession. Someone replaced my ketchup with this …..
Homemade BBQ sauce! This left me ketchup-less, but BBQ sauce is made with ketchup, so I used it.
Pour into the pot.
Add in the beer and cilantro. Heat through.
Toss in the remaining cilantro and squeeze in the lime.
Serve on a bun baby, sprinkle on some cheese and jalapeno. Or a lil Sriracha if you left out extra chipotle peppers since you share meal times with the spicy intolerant.
