Since my family has been so nice to try everything I make, I decided it was time to reward them with what they want. COOKIES! Here we go with 2 new yum yums!
First up …. Almond Joy Cookies.
1 cup salted butter @ room temperature
1 1/2 cups sugar
2 1/4 cup flour
1 tsp. baking soda
1 tsp salt
14 oz sweetened shredded coconut
3 cups chocolate chips
1 1/2 cups slivered almonds
Preheat oven to 350 degrees. Cream together the butter and the sugar. Add the eggs and mix again.
In another bowl, mix together the flour, baking soda and salt. Slowly add a little at a time to the wet mix.
Time to throw in the goodies in.
Stir well with a wooden spoon. Consider this part your workout. Your arms will be working! Spoon onto a parchment lined baking sheet.
Bake for 10 minutes until blissfully baked. By the way, they don’t taste like an almond joy. They taste better!
Round 2 …. Oreo Stuffed Chocolate Chip Cookies.
2 sticks of butter @ room temperature
3/4 cup light brown sugar
1 cup sugar
1 Tbsp of vanilla extra …. or half a vanilla bean if you are like me and forgot to get the extract
3 1/2 cups flour
1 tsp salt
1 tsp baking soda
2 cups chocolate chips
1 package double stuff Oreos
Add eggs and vanilla.
Mmmm, nice and creamy. Now add flour salt & baking soda slowly into the wet mix.
Add chocolate chips.
Now form balls of dough. Grab an oreo, and place it between 2 balls.
Enclose the oreo inside the dough.
Dang those are HUGE! Cook for 13 minutes. So mine grew wide but oh well. They were still awesome!
Slice open to reveal the prize inside.
Needless to say, my family enjoyed them and I was forbidden from sharing. Luckily I’m a nice person and love to share.

Oh yeah and an update. Being nice goes a long way so I made a second batch for some co-workers and they may have turned out more bom-diggity than the first ones. I’m totally a fan of dark chocoalte though, so those gets my vote! For your viewing pleasure …
