Cake Batter Galore

OMG why do I keep reading about food, oh glorious food! I always happen upon stuff I should not eat but that I have to because they look so freakin’ good. Case in point, things made with cake batter. WTF you may ask … well I thought the same thing. The most popular flavor at my heaven on earth, Menchie’s,  is Cake Batter. Maybe I found a gold mind. Oh well, one more bad thing couldn’t hurt.

Since Bee can’t eat popcorn due to the metal in her mouth, she insisted we make something together that she could eat. What did she pick, cake  batter cookies. Ay ay ay.

1/3 cup oil

2 eggs


Preheat ov to 375 degrees, mix all this together but the frosting. Scoop onto un-greased cookie sheet and squish down flat. Bake for 9 minutes. While baking stir sprinkles into the frosting. Find a kid to do this for you. Look I found one 🙂

Frost when cookies have slightly cooled.

Stuff one in your mouth, enjoy!

Now onto cake batter popcorn.

pop some popcorn on the stove … not that microwaveble crap, like 6 cups

1 cup butter

1 cup cake mix (we used yellow)

1 cup sugar

1/2 cup light corn syrup

1 tsp salt

1 tsp vanilla

Preheat oven to 250 degrees.

Lay out popcorn on greased baking sheets. Remove all those pesky seeds!

Heat everything but the vanilla in a saucepan, bring to a boil and don’t forget to stir cause this stuff will burn.

Once it starts to boil, add the vanilla. When goop has been boiling for 5 minutes, pour over popcorn.


Bake for an hour, stir every 15 minutes. Let cool and shove in your mouth the same way you did with the cookie.

Off to brush my teeth!
