I love to make things my man likes, and with saying that, there is nothing he likes more than pecan pie. So when I found a recipe for Pecan Pie Bars, I knew that was my next mission. Gooey goodness for the soul, well his anyway, I’m saving up for Eggnog Pudding on X-Mas Eve.
For the crust:
2 sticks softened unsalted butter
2/3 cup brown sugar
2 & 2/3 cup flour
1/2 tsp salt
Get your oven nice and warm at 350 degrees. Prepare a 9 x 13 pan by lining it with foil and leaving extra to fold over the side of the too. Using the foil prevents that sticky ish from attaching itself to your pan and you cursing as you break nails while attempting to scrape it off. Cream the butter and sugar together, then add the flour and salt in. You want the mixture to get crumbly. Throw the mix into the pan and press it down all nice and pretty.
Cook that for 20 minutes.
Time for that yummy filling.
1 stick unsalted butter
1 cup brown sugar
1/3 cup honey
2 tbsp heavy cream
2 cups chopped pecans
Bring these to a boil except for the pecans and let simmer for 1 minute.
Toss your nuts into the mix (LOL)
Once crust is done, pour this over it and place back in the oven for 20 more minutes.
Finshed product should look like this.
Let is cool. Slice into bars and present them just slightly warmed in the microwave, like 20 seconds tops.
